Easy Raw Valentine Treat

Ingredients

  • ½ cup melted cacao butter
  • ¼ cup soaked cashews
  • 3 Tablespoons agave
  • 1 teaspoon Lucuma
  • 2 teaspoons carob powder (or cacao if you’d prefer)

Directions

For these Easy Raw Valentine Treats:

Blend all ingredients in blender then pipe into heart molds (or any other mold you’d like). Place in freezer to harden up then enjoy your delicious Valentine’s Day Chocolates!!

Festive Fruit Salad

Ingredients

  • 2 Granny Smith apples
  • 2 sweet pink apples, I like Pink Lady
  • 4-6 clementines
  • 3 lemons, juiced
  • handful of pomegranate seeds
  • 1/2 cup dried cranberries
  • 1 1/2 Tablespoons cinnamon
  • 3 Tablespoons maple syrup or agave
  • a dash of vanilla

 

Directions

For the Festive Fruit Salad:

Chop the apples into bite-sized pieces. Peel the clementines and section them.

Squeeze the lemon juice over the apples and clementines. Add in the cinnamon, vanilla, pomegranate seeds, cranberries, and maple syrup and mix well.

Chill before serving. This is delicious topped with some Coconut Whipped Cream!

Easy as Pie: Pumpkin Pie Recipe

Ingredients

  • 1 can pumpkin puree
  • 1 cup cashews, soaked in water for 8 hours
  • 1 cup maple syrup
  • 2 teaspoons pumpkin pie spice

Directions

Easy as Pie: Pumpkin Pie Recipe:

Preheat oven to 400 degrees.

In food processor or high-speed blender, puree the cashews, maple syrup, pumpkin, and pumpkin pie spice together until smooth.

Pour into pie pan (you can use a pre-made crust but I like mine crustless!) and bake at 400 degrees for 15 minutes, then reduce the temperature to 350 degrees and bake for an additional 30 minutes, or until top is nicely browned.

Cool on stove for 10 minutes, then in fridge for an additional 2 hours to let it set.

Easy Raw Applesauce

Ingredients

  • 3 sweet apples, cored and cut into quarters
  • 4-5 pitted dates
  • 1 teaspoon cinnamon, or to taste

Directions

This raw applesauce recipe is incredibly simple. Just add all ingredients into food processor and process until well mixed.

Super Easy Sweet Potato Pie

Ingredients

  • 1 cup almonds
  • 1 cup maple syrup
  • 2 sweet potatoes
  • 2 teaspoons cinnamon
  • 3/4 teaspoon nutmeg

For this easy sweet potato pie,  preheat oven to 400 degrees. Bake 2 large sweet potatoes for 45-60 minutes, or until done. Allow them to cool.

Process almonds in food processor until ground to a fine powder. Skin the sweet potatoes and add them, the maple syrup, and cinnamon and nutmeg into the processor. Process until all ingredients are well mixed. Pour into a pie pan.

Bake at 400 degrees for 15 minutes, then reduce temperature to 350 degrees and bake for an additional 30 minutes.  Allow to cool for 10 minutes on the counter, then chill for 2 hours in the refrigerator so it sets.  Serve your delicious sweet potato pie with some Coconut Whipped Cream for an extra special holiday treat!
