Pumpkin Agave Muffins

Ingredients

  • 1 can pumpkin puree
  • 2 Tablespoons coconut oil
  • 1/4 cup water
  • 1/2 cup agave
  • 1 3/4 cup whole wheat flour
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1/4 teaspoon cloves
  • 1/4 teaspoon salt

Directions

Preheat oven to 350 degrees and lightly oil muffin tray.

Mix the wet ingredients (pumpkin, oil, water, and agave). Then mix the dry ingredients (flour, spices, baking powder, baking soda) in a separate bowl. Then mix the wet and dry ingredients together.

Fill muffin trays about 3/4 full with batter and bake for about 18 minutes, or until toothpick inserted in a muffin comes out pretty clean.

Omega Lollipops

Ingredients

  • 1/2 cup agave
  • 1/2 cup toasted sesame seeds
  • 1/4 cup hemp seeds
  • 1/4 teaspoon almond extract

Directions

For Omega Lollipops:

Heat the agave over medium heat until bubbly. omega-lollipops

Add the rest of the ingredients and cook on medium-low for 3-4 minutes.

Pour into molds with sticks and set in freezer to set.

Healthy Peanut Butter Cookies

Ingredients

  • 1 cup peanut butter
  • 1/3 cup honey
  • 1 egg
  • 1/2 teaspoon baking soda

 

Directions

Preheat oven to 350 degrees and line a cookie sheet with parchment paper.  healthy peanut butter cookies

Combine all ingredients in a bowl and mix well.

Using an ice cream scooper, scoop cookie dough onto cookie sheet to form into cookies. You can either leave them as little balls or takea  fork and press them down a bit for a flatter cookie.

Bake for 8 minutes. Let them cool then place them in the fridge for chewy healthy peanut butter cookies.

Carob Fudge Pops

Ingredients

  • 3 ripe bananas
  • 3/4 cup almond milk or water
  • 1 Tablespoon carob powder
  • 2 Tablespoons agave
  • 1 teaspoon vanilla
  • 1 Tablespoon almond butter

 

Directions

For the Carob Fudge Pops:

Blend all ingredients together in the blender until smooth.

Pour into ice pop molds and freeze for 3-4 hours.

Easy Raw Valentine Treat

Ingredients

  • ½ cup melted cacao butter
  • ¼ cup soaked cashews
  • 3 Tablespoons agave
  • 1 teaspoon Lucuma
  • 2 teaspoons carob powder (or cacao if you’d prefer)

Directions

For these Easy Raw Valentine Treats:

Blend all ingredients in blender then pipe into heart molds (or any other mold you’d like). Place in freezer to harden up then enjoy your delicious Valentine’s Day Chocolates!!

Green Pineapple Pops

Ingredients

  • 1 banana
  • 1 cup chopped pineapple
  • 1 handful baby spinach
  • water for blending

Directions

To make these Green Pineapple Pops:  Blend the ingredients until smooth and pour into ice pop molds.

Freeze for 4-6 hours.

*Note: I used paper cups and craftsticks for mine. To do that, simply place a slice of banana in the bottom of each cup and stick one end of the craft stick in the banana to hold in place.
