Pumpkin Agave Muffins

Ingredients

  • 1 can pumpkin puree
  • 2 Tablespoons coconut oil
  • 1/4 cup water
  • 1/2 cup agave
  • 1 3/4 cup whole wheat flour
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1/4 teaspoon cloves
  • 1/4 teaspoon salt

Directions

Preheat oven to 350 degrees and lightly oil muffin tray.

Mix the wet ingredients (pumpkin, oil, water, and agave). Then mix the dry ingredients (flour, spices, baking powder, baking soda) in a separate bowl. Then mix the wet and dry ingredients together.

Fill muffin trays about 3/4 full with batter and bake for about 18 minutes, or until toothpick inserted in a muffin comes out pretty clean.

Low-fat Vegan Scramble Recipe

Ingredients

  • 1 package extra firm tofu
  • 2 Tablespoons nutritional yeast
  • 1/2 cup shredded daiya cheese (optional)
  • 1 teaspoon onion powder
  • 1/2 teaspoon sea salt
  • 1 clove garlic minced
  • 1 Tablespoon soy sauce
  • 1 teaspoon spicy mustard
  • pinch of turmeric (for color)
  • 1 package sliced mushrooms
  • 2 handfuls baby spinach
  • water as needed

Directions

To make this Low-Fat Vegan Scramble recipe:

Drain and press the tofu then crumble it up into a bowl using your hands.

Add the cheese, nutritional yeast, garlic, onion powder, salt, mustard, turmeric, and soy sauce and mix well to combine.

Heat a non-stick skillet over medium heat and add a small amount of water. Saute the mushrooms for a couple minutes adding water as needed.  Then add a few handfuls of baby spinach and put the lid on the skillet to steam the spinach for 2 minutes.

Pour the tofu mixture in with the mushroom/spinach mixture and heat thoroughly. I wait until all the extra liquid has disappeared.

Top this with salsa and you have a delicious breakfast or meal anytime of the day!

Easy Raw Applesauce

Ingredients

  • 3 sweet apples, cored and cut into quarters
  • 4-5 pitted dates
  • 1 teaspoon cinnamon, or to taste

Directions

This raw applesauce recipe is incredibly simple. Just add all ingredients into food processor and process until well mixed.

Sweet Almond Milk

Ingredients

  • 1 cup almonds, use raw almonds if wanting raw almond milk
  • 4 cups water
  • 1 Tablespoon agave or 1-2 dates, pitted, optional
  • 1-2 teaspoons vanilla, optional

 

Directions

Sweet Almond Milk

To make almond milk, add almonds into blender with the water. Add in optional ingredients if using.

Blend on high until smooth and creamy.

Strain milk through a nut-milk bag or two layers of cheesecloth (This step is not necessary but makes for a much smoother milk) and store in fridge for up to 3 days.

 

Pumpkin Pie Oatmeal

Ingredients

  • 2 cups oat groats or rolled oats
  • 4 cups water
  • 1 cup pumpkin puree
  • 2 teaspoons pumpkin pie spice
  • 2 ripe bananas or 2 Tablespoons maple syrup
  • Optional: 2 Tablespoons chia seeds (great source of omega 3s)

Optional Toppings:

  • coconut shreds
  • favorite nuts/seeds
  • cold almond milk

Directions

Pumpkin Pie Oatmeal

For this easy Pumpkin Pie Oatmeal recipe, simply boil the water in a large saucepan. Once boiling, add oats. Reduce to a simmer and cook until oats are fluffy and liquid is absorbed.

After oats are finished cooking, stir in the pumpkin puree, pumpkin pie spice, chia seeds, and either the 2 bananas mashed or the maple syrup.

Divide into serving bowls and top with your favorite toppings, such as coconut flakes, nuts, or even some cold almond milk.

Almond Yogurt Bowl

Ingredients

  • 1 cup almonds, soaked overnight and drained
  • Juice of 1 lemon
  • 2-3 probiotic capsules, optional
  • Water for blending

Directions

Directions: Place almonds and lemon juice in blender. Blend with enough water to make it your desired consistency. Add in the probiotic capsules and blend again. [Optional]

Serve topped with your favorite fruit.
